Flaked Rice is 100% fermentable so it thins the body of beers that you want to have a lighter body, such as American Premium Pils, but also ESBs and old ales.  It is recommended that you gelatinize the material before adding it to your mash.  Lower the conversion temperature and extend your mash time.
